Although we have made this beer once previously, it was just accessible on our guided visit and for special functions. The base beer is a Pilsner aged in Sauvignon Blanc barrels with the expansion of Sauvignon Blanc grape juice from the 2018 harvest for auxiliary fermentation. The juice and barrels are from Dutton Vineyards in the Russian River wine epithet here in Sonoma County. There is no lactobacillus or pediococcus added to the beer, just Brettanomyces. The tart causticity originates from the wine grapes. This beer is sensitive and wonderfully adjusted, an ideal refresher on a warm summer day!
