Oats and wheat—both malted and unmalted assortments—are basic to the formula, down to their careful cosmetics of proteins, beta-glucans, diastatic power, and other beer-geeky specs. When we're fermenting, this exact grain establishment associates with the polyphenols (think pre-murkiness atoms) in epic volumes of lupulin hop dust, which is essentially the unadulterated flavor from inside hop cones, to produce a smooth and succulent cloudiness. We cool our fermenters at somewhat higher temperatures than ordinary so the fog doesn't blur, at that point we skirt the channel to bundle all the hazy flavor in its prime—directly from the tanks and into the can.
