Fencerow begins as a Missouri Wild Ale which is aged in French oak until maturity. At maturity, we blended this base with other Missouri Wild Ales aged in Missouri and French Oak to dial in our level of acidity and complexity and to lay the framework for re-fermentation on Oregon Black Raspberries.
At maturity, we racked the beer onto 4000 lbs of Oregon Black Raspberries and allowed the beer to ferment once again to dryness. We then bottle condition and age this beer in the bottle until it is ready to share with you.
