Berliner Ryesse has a light body and is nice and fresh. The beer is sour and light-alcoholic. The acidity comes from lactic acid. This is formed by lactobacilli during a kettle sour (souring the wort in the boiling kettle). With the addition of raspberries, this beer has acquired a light pink color and a subtle raspberry taste. Because of its taste, the Berliner Weisse is also called Champagne from the north.
