This beer is one of a kind and propelled by breweries in the Lambic district of Belgium and, especially, our companions at Cantillon. It is 100% unexpectedly fermented, which means the yeast is not added. When the beer is brewed, it is moved to a cool-transport or "horny" tank situated in our barrel room at the bar. There it sits for the time being and gathers whatever crazy wild yeast and microorganisms might be living in the room. The following day it is moved to oak wine barrels where it ferments fiercely and ages for a couple of months. The final product is a wild, immediately fermented, acrid, and scrumptious hand-crafted beer!
